( SOUR SOUP FISH ) IKAN KUAH ASAM

Ikan Kuah Asam Bahan:

500 g ikan kakap/ikan kerapu dipotong menjadi 4 bagian 3 sdm air asam 1/2 sdm garam untuk melumuri 3 sdm minyak goreng 4 buah tomat dipotong 8 bagian 4 lembar daun jeruk purut 4 batang daun bawang dirajang 1 cm 5 bauh cabe merah dibelah dan dibuang bijiya 2 buah jeruk nipis diambil airnya 1 genggam daun kemangi yang sudah dipetik daunnya 2 sdt garam 3 batang sereh diambil putihnya 800 ml air Cara membuat :

  • lumuri ikan dengan minyak goreng, air asan dan 1/2 sdm garam hingga rata kemudian diamkan 20 menit dan bakar hingga 1/2 matang
  • panaskan air hingga mendidih, kemudian kecilkan api, masukkan ikan, tomat, daun jeruk, daun bawang, cabe merah, sereh dan garam, rebus hingga matang
  • sebelum diangkat, masukkan daun kemangi dan air jeruk hidangkan hangat-hangat
Material :

500 g snapper / grouper cut into 4 parts 3 tbsp acid water 1/2 tbsp salt to smear 3 tbsp cooking oil 4 tomatoes cut 8 parts 4 kaffir lime leaves 4 chopped leeks 1 cm 5 red chillies cut and the seeds are removed 2 pieces of lime taken water 1 handful of basil leaves that have been picked the leaves 2 teaspoons of salt 3 lemongrass stems taken white 800 ml water

How to make :

coat the fish with cooking oil, asan water and 1/2 tablespoon of salt until blended then let stand 20 minutes and roast until 1/2 cooked
heat the water until boiling, then reduce the heat, add the fish, tomatoes, orange leaves, leeks, red chili, lemongrass and salt, boil until cooked
before lifting, add the basil leaves and serve lemon juice warm
