EEL MAP BALADO (BALADO BELUT PETAI)

EELMAP BALADO (BALADO BELUT PETE)

Bahan : 

1 kg belut sawah hidup ukr kecil
3 lonjor pete
Jeruk nipis secukupnya

Bumbu marinasi belut:
-haluskan semua-
4 siung bawang putih
1 batang sereh, ambil bagian putihnya aja
1/2 sdm ketumbar 
5 lbr daun jeruk
1 cm kunyit 
Garam

Bumbu balado:
-ulek kasar-
250gr cabe merah kriting
15 siung bawang merah
3 tomat merah ukr sedang
Garam

Caranya:

1. Cuci bersih belut, lumuri dengan air jeruk nipis dan garam, diamkan sekitar 30 menit, bilas berkali-kali sampai bersih dan hilang lendirnya
2. Lumuri belut dengan bumbu marinasi, diamkan di kulkas minimal 1 jam, lalu goreng belut dalam minyak panas dengan api keciiiil, harus sabar karena lama biar hasilnya benar-benar garing tapi gak gosong ya
3. Tumis bumbu balado sampai harum, setelah hampir matang, masukkan pete, bumbui garam.
simpan belut goreng dalam wadah tertutup, campurkan dengan balado sesaat sebelum makan.

BALADO EEL MAP

Material :

1 kg of live small rice eels
3 stems pete
Lime to taste

Eel marinade:
-suff everything-
4 cloves garlic
1 lemongrass, just take the white part
1/2 tablespoon coriander
5 tablespoons of orange leaves
1 cm turmeric
Salt

Balado Seasoning:
rough-temper
250gr red chili peppers
15 cloves of shallot
3 medium red tomatoes
Salt

How:

1. Wash off the eel, coat it with lime juice and salt, leave it for about 30 minutes, rinse it repeatedly until it is clean and the mucus is gone
2. Marinate the eel with marinated seasoning, leave it in the refrigerator for at least 1 hour, then fry the eel in hot oil with a small flame, must be patient because it takes a long time so the results are really crispy but not burnt
3. Saute the balado spices until fragrant, after they are almost cooked, add the bananas, season the salt.
keep fried eels in a closed container, mix with balado just before eating.
