Galangal fried chicken (use coconut milk) AYAM GORENG LENGKUAS

Ayam goreng lengkuas (pakai santan) 
 
Bahan :

4 paha ayam (atas bawah) 
200gr lengkuas (aku blender) 
900ml air santan 
2 1/2 sdt garam kasar /sesuai selera 
1/2sdm gula pasir 
1/2sdt lada bubuk 
1sdm ketumbar bubuk 
2 lembar daun jeruk 
2 lembar daun salam 
1 batang sereh .

Bahan bumbu halus : 

2 ruas kunyit 
Seruas jahe 
7 siung bawang putih 
5 bawang merah .
.
Cara Membuat : 

1) Bersihkan ayam lalu taruh diwajan, beri bumbu halus, air santan gula garam ketumbar lada bubuk daun jeruk daun salam sereh. Masak dengan api besar selama 10menit. 
2) jika lengkuas diblender menggunakan air, saring dulu lengkuasnya agar gak banyak air.  Lalu masukkan ke ayam ya g sedang diungkep, tetap masak dengan api besar sambil sesekali diaduk.  Jika sudah menyusut, matikan api. 
3) pisahkan ayam dengan bumbunya.  Bumbu disaring dulu hingga gak ada air bekas ungkepan. 
4) Panaskan minyak, masukkan ayam yg sudah diungkep tadi, goreng hingga matang dengan api kecil biar gak gosong.
5) Setelah semua ayam yg diperlukan sudah digoreng. Goreng bumbu lengkuas hingga kecoklatan, lalu tiriskan biarkan minyaknya berkurang.  Setelah itu sajikan . Ayam goreng lengkuas siap disantap 

Galangal fried chicken (use coconut milk)

Material :

4 chicken legs (top down)
200gr galangal (I blender)
900ml of coconut milk
2 1/2 teaspoons salt / to taste
1/2 tsp granulated sugar
1/2 tsp pepper powder
1sdm coriander powder
2 pieces of orange leaf
2 bay leaves
1 lemongrass stick.

Fine seasoning ingredients:
2 turmeric segments
As ginger
7 cloves of garlic
5 shallots.

How to make :

1) Clean the chicken and put it on the pan, give it a spice paste, coconut milk, sugar, salt, coriander, pepper leaves, orange leaves, salamh leaves. Cook on high heat for 10 minutes.
2) if the galangal is blended using water, strain the galangal so there is not much water. Then put it in the chicken that is being covered, keep cooking on high heat while stirring occasionally. If it has shrunk, turn off the heat.
3) separate the chicken from the marinade. Seasoning is filtered first so that there is no water from ungkepan.
4) Heat the oil, add the chicken that was covered earlier, fry until cooked over low heat so it doesn't burn.
5) After all the chicken that is needed is fried. Fried galangal seasoning until browned, then drain let the oil decrease. After that, serve. Galangal fried chicken is ready to eat
